Mozzarella sticks

Ingredients:

  • 1 package of mozzarella
  • 1 egg
  • 1 tablespoon garlic powder
  • 1/2 teaspoon salt
  • 1 cup panko crumbs
  • Olive oil

Instructions:

  1. Cut the mozzarella into strips.
  2. Beat the egg with garlic powder and salt.
  3. Dip the strips in the egg and sprinkle with breadcrumbs.
    Care must be taken to ensure that each exposed piece of cheese is well covered.
  4. Freeze the strips for 20-30 minutes to prepare the dish.
  5. Preheat the air fryer for 5 minutes at 210 degrees, during this time brush/spray the strips with olive oil.
  6. Place the strips in the air fryer on the rack, set the highest temperature and set the timer for 6-10 minutes, checking and turning every 2-3 minutes to ensure that they brown evenly.

French fries

Ingredients:

  • 2 medium potatoes, washed and dried
  • 2 tsp olive oil
  • ¼ tsp kosher salt
  • ¼ tsp garlic powder
  • Fresh cracked black pepper, to taste
  • Cooking spray
  • Grated Parmesan cheese, optional

Instructions:

  1. Slice each potato into even ¼-inch thick fries.
  2. Cover potatoes with water and let soak for 5 minutes to release excess starches. 
  3. Drain and cover with boiling water. Let sit for 10 minutes.
  4. Drain potatoes and transfer onto some paper towels. Blot off the excess water and let cool completely, at least 10 minutes.
  5. Toss the potatoes and oil in a medium bowl. Season with salt, garlic powder and black pepper to taste, toss to coat.
  6. Place in a single layer without overlapping or crowding.
  7. Cook for 20 minutes, shaking halfway until golden brown and crisp. Serve with your favorite dipping sauce.

Southern fried chicken

Ingredients:

  • 2 cups crushed Ritz crackers
  • 1 Tbsp minced fresh parsley
  • 1 tsp garlic salt
  • 1 tsp paprika
  • ½ tsp pepper
  • ¼ tsp ground cumin
  • ¼ tsp rubbed sage
  • 1 large egg, beaten
  • 1 broiler/fryer chicken (1kg), cut up
  • Cooking spray

Instructions:

  1. Mix the crackers, parsley, salt, paprika, pepper, cumin and sage in a shallow bowl.
  2. Place egg in a separate shallow bowl.
  3. Dip chicken in egg, then in cracker mixture, patting to help coating adhere. 
  4. Arrange chicken in a single layer, spritz with cooking spray.
  5. Cook until golden brown and juices run clear, about 20 to 25 minutes. Serve immediately.

Chocolate cupcakes

Ingredients:

  • 4 ounces of dark chocolate
  • 1/3 cup cocoa powder
  • 3/4 cup hot milk
  • 1 cup flour
  • 3/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 2 eggs
  • 2 teaspoons white vinegar
  • 1 teaspoon vanilla extract
  • Chocolate cream

Instructions:

  1. Place dark chocolate and cocoa powder in a medium bowl. Add hot milk and beat until smooth. Set aside to cool completely or refrigerate for 20 minutes.
  2. Combine flour, sugar, baking powder and salt.
  3. In another bowl, whisk to combine the vegetable oil, eggs, vinegar and vanilla.
  4. Add the cooled chocolate mixture to the wet ingredients and beat until smooth. Then add the flour mixture and beat until the mixture is smooth.
  5. Pour the batter into individual paper-lined silicone cake molds. Bake 6 cupcakes at a time.
  6. Preheat the air fryer for 5 minutes at 180 degrees.
  7. Set the temperature to 160 degrees and set the timer for 20 minutes. Bake the cupcakes until a toothpick inserted into the center of the muffin comes out clean.
  8. When cool, cover with chocolate cream.
